First, let’s prepare the mushrooms and vegetables. Gently tear the oyster mushrooms into bite-sized pieces. If any mushrooms have large caps, cut them in half. Thinly slice the onion and thinly slice the green onion on an angle. Lightly beat the egg in a small bowl.

For the chicken, using pre-cooked boneless fried chicken makes preparation quick and easy. If you’re using raw chicken breast, you can boil or pan-fry it until cooked through, then cut it into bite-sized pieces. If using frozen boneless chicken, preheat your air fryer to 180°C (350°F) and cook for about 5 minutes until heated through. Then, cut into bite-sized pieces.

Now, let’s make the delicious donburi sauce. In a pot, combine the water, mentsuyu, dark soy sauce, brown sugar, sake, and a pinch of pepper. Bring this mixture to a simmer over medium heat.
