Cooking Instructions
Step 1
Rinse the bean sprouts thoroughly under running water and drain them well. Excess water can make the steamed dish soggy, so ensure they are properly drained.
Step 2
Trim the tough base of the king oyster mushrooms and give them a light rinse. Pat them dry.
Step 3
Cut the chives into approximately 5-6 cm lengths. This makes them easier to eat and prevents tangling during steaming.
Step 4
Prepare the thinly sliced beef brisket. You can use it directly from frozen if needed. If it’s clumped together, gently separate the slices.
Step 5
Now, let’s layer the ingredients in the steamer. Start by placing about one-third of the prepared bean sprouts at the bottom of the steamer.
Step 6
On top of the bean sprouts, arrange one-third of the chopped chives.
Step 7
Next, evenly layer one-third of the thinly sliced beef brisket over the chives.
Step 8
Finally, add one-third of the king oyster mushrooms on top of the beef brisket to complete the first layer.
Step 9
Repeat the layering process (bean sprouts, chives, beef brisket, mushrooms) with the remaining two-thirds of the ingredients. Layering helps meld the flavors beautifully as it steams.
Step 10
Carefully pour 1/2 cup of water around the edges of the steamer. Sprinkle 3 Tbsp of cooking wine and a pinch of salt over the ingredients. The vegetables will release moisture as they steam, so a small amount of added liquid is sufficient.
Step 11
Cover the steamer with a lid and steam over medium-high heat for 15-20 minutes. Once cooked, turn off the heat and let it rest, covered, for 5 minutes. This allows the juices to redistribute, resulting in a more tender and flavorful dish.
Step 12
While the beef and vegetables are steaming, let’s prepare the refreshing lemon dipping sauce. In a small bowl, combine 3 Tbsp Tsuyu soy sauce, 2 Tbsp cooking wine, 2 Tbsp water, 2 Tbsp finely chopped green onions, and 2 Tbsp fresh lemon juice. Stir well until everything is combined.
Step 13
Transfer the steamed beef brisket and bean sprout dish to a serving plate. Sprinkle with sesame seeds for garnish. Serve alongside the lemon dipping sauce and a small amount of mustard paste. To enjoy, dip the steamed ingredients into the lemon sauce mixed with a little mustard for a light and zesty flavor.
