Main Ingredients- 200g fresh beef (thinly sliced for shabu-shabu or steak)
- 1/2 medium onion
- A little fresh wasabi (adjust to taste)
- 1 bowl of warm cooked rice (approx. 200g)
- 3 pinches of salt
- Sushi vinegar: 1 Tbsp rice vinegar, 1 Tbsp sugar
Special Beef Sauce- 2 Tbsp soy sauce
- 2 Tbsp water
- 2 Tbsp sugar
- 2 Tbsp soy sauce
- 2 Tbsp water
- 2 Tbsp sugar
Cooking Instructions
Step 1
Begin by peeling and thinly slicing half an onion. For a milder, crisper texture, soak the sliced onion in cold water for a few minutes, then drain thoroughly and pat dry.
Step 2
In a bowl, combine the warm cooked rice with 3 pinches of salt, 1 tablespoon of rice vinegar, and 1 tablespoon of sugar. Gently mix using a spatula or rice paddle, ensuring the rice grains remain intact to create a fluffy base for your sushi.
Step 3
Pat the beef slices dry with a paper towel to remove excess moisture. Heat a lightly oiled skillet over medium heat. Quickly sear the beef on both sides until just cooked through – avoid overcooking to maintain tenderness. Once cooked, slice the beef into pieces that will fit nicely on top of the sushi rice.
Step 4
In a small saucepan, combine 2 tablespoons of soy sauce, 2 tablespoons of water, and 2 tablespoons of sugar. Bring to a simmer over medium heat, stirring occasionally, until the sauce slightly thickens to a glaze-like consistency. This creates your delicious special beef sauce.
Step 5
Take a portion of the prepared sushi rice and shape it into an oval sushi nigiri form in your palm. Dab a small amount of wasabi onto the rice, and then carefully place a slice of the cooked beef on top, pressing gently to secure it.
Step 6
Arrange the thinly sliced onion over the beef slice on each sushi piece. Drizzle the special beef sauce generously over the top. For an extra touch of flavor and a beautiful presentation, you can briefly torch the top of the sushi rolls – this caramelizes the sauce and beef, enhancing the taste significantly. Enjoy your homemade gourmet beef sushi!
