Eggplant can easily fall apart when cooked, so cutting it slightly thicker is a great tip for maintaining its texture (about 1cm thick is recommended). Thinly slice the onion and julienne the carrots. Chop the green onion into small pieces; you can use them as a garnish or add them during cooking. Heat a generous amount of cooking oil in a pan over medium heat, then add the sliced eggplant and onion. Stir-fry until softened.
