Step 1

Start by carefully separating the egg whites from the yolks for your 2 fresh eggs. Ensuring no yolk contaminates the whites is crucial for achieving the perfect meringue. Place the egg whites in a clean, dry bowl. Using an electric mixer or a whisk, beat the egg whites until stiff peaks form. This means that when you lift the whisk, the peaks stand up straight without curling over.

Step 2

Once soft peaks begin to form, gradually add the 100g of sugar in 3 to 4 additions while continuing to beat. Adding sugar slowly helps it dissolve properly and creates a stable, glossy meringue. Keep beating until the mixture is stiff, glossy, and the sugar is completely dissolved. You should be able to form firm peaks that hold their shape.

Step 3

Transfer the meringue mixture into a piping bag fitted with your desired tip. Line a baking sheet with parchment paper or a silicone baking mat. Pipe small mounds or shapes onto the prepared baking sheet, ensuring they are spaced apart. Try to make them relatively uniform in size for even baking. Avoid piping them too thinly, as they can break easily.

Step 4

Preheat your oven to 100°C (210°F). Place the baking sheet with the piped meringues into the preheated oven. Bake for 1 hour. Meringues are baked at a low temperature for an extended period to dry them out, making them crisp on the outside and completely dry throughout. Once baked, turn off the oven and let the meringues cool completely inside the oven with the door slightly ajar, or remove and let them cool on a wire rack. Be gentle as they are delicate when warm.
