For all the tteok (rice cake) lovers out there, I highly recommend trying this delightful variation! Experience a different side of tteokbokki with the wonderful combination of premium Mokwoo-chon ham and tender rice cakes, transformed into a delicious Gungjung Tteokbokki. This dish offers a sophisticated flavor profile that sets it apart from regular tteokbokki. It’s perfect for hosting guests or as a special weekend treat for your family.
Main Ingredients- 100g Mokwoo-chon lean ham
- 12 Tteokbokki rice cakes (approx. 150g)
- 1/4 Carrot (about 2cm in height)
- 1/2 stalk Green onion (green part only)
- 2 Dried wood ear mushrooms
- 1 cup Water (200ml)
Cooking Instructions
Step 1
Prepare all your ingredients for a beautiful presentation. First, slice the ham into 0.5cm thick pieces, then cut them into 2.5cm long triangles. Slice the carrot into 0.3cm thick half-moons. Cut the green onion into 2cm lengths on a diagonal. Soak the dried wood ear mushrooms in lukewarm water for about 10 minutes until softened. Trim off any tough bases and tear them into 2cm pieces.
Step 2
In a deep pan or pot, combine 1 cup (200ml) of water, 1 Tbsp soy sauce, 2 Tbsp honey, and 1 tsp minced garlic. Stir well to create the sauce. Add the tteokbokki rice cakes and bring to a boil over high heat. Once the rice cakes begin to soften, add the sliced carrots and the rehydrated wood ear mushrooms, and continue to simmer.
Step 3
As the sauce thickens and the rice cakes, carrots, and mushrooms become tender, add the sliced ham and green onions. Stir-fry for just 1-2 minutes more, until the ham and green onions are slightly wilted. Finally, stir in 1 tsp sesame oil and a pinch of black pepper. Taste and adjust seasoning with salt if needed. Your delicious and glossy Ham Gungjung Tteokbokki is ready! It’s a fantastic dish for entertaining guests and a popular snack for children.
