This recipe is simple yet boasts a rich flavor, making it an appealing dish for busy days or special occasions. Soy Sauce Dressing Ingredients

  • Tsuyu or Katsuo dashi (bonito broth) concentrate: 3 Tbsp (or use an equal amount of regular soy sauce)
  • Water: 3 Tbsp
  • Cheongyang chili pepper: 1 (seeds removed, thinly sliced diagonally or minced)

Cooking Instructions

First, prepare to boil the somyeon noodles according to your serving size. Fill a large pot with plenty of water and bring it to a rolling boil. Once the water is boiling vigorously, carefully add the somyeon noodles.

While the noodles are boiling, add about half a cup of cold water three times, each time when the water starts to boil and rise. This process of boiling and adding cold water helps to cook the noodles to a perfectly chewy and firm texture.

While the noodles are cooking, let’s make the delicious soy sauce dressing! Prepare the Cheongyang chili pepper by removing the stem and seeds, then slice it thinly on a diagonal or mince it finely for the best presentation. (Tip: If you prefer less heat, ensure all seeds are removed. For a milder flavor, thinly slicing is recommended. If it’s too spicy, it might be difficult to enjoy the broth!)

For the base of the soy sauce dressing, you can use store-bought Tsuyu or bonito broth concentrate (Katsuo dashi) if you have it. If not, regular soy sauce will also work well. The ratio of Tsuyu or bonito broth (or soy sauce) to water should be 1:1. (e.g., 3 Tbsp Tsuyu, 3 Tbsp Water)
