Hello! Today, I’m sharing a super simple cucumber salad (Oi Muchim) recipe that you can make in just 5 minutes using fresh, seasonal cucumbers. Its crisp texture and sweet, sour, and spicy flavors make it an irresistible side dish that pairs perfectly with rice. This is a fantastic banchan (side dish) that can be made with even a few ingredients from your fridge. You can adjust the saltiness to your taste at the end. (Measurements are based on a tablespoon = 1T)

Main Ingredients

  • 1 medium cucumber
  • 1/4 medium onion (if large, use 1/4)
  • 1 Tbsp chopped green onion
  • 1/3 Tbsp minced garlic
  • 1/2 Tbsp sesame seeds

1. First, wash the cucumber thoroughly to remove any small spines on the surface. Then, cut it in half lengthwise, and slice it diagonally into approximately 0.5cm thick pieces. Slicing them not too thinly will help maintain their crispness.

2. Peel and wash the 1/4 onion, then slice it thinly into slivers. Thinly sliced onions will mix better with the cucumbers and seasoning.

3. In a large bowl, combine the chopped green onion (1 Tbsp), minced garlic (1/3 Tbsp), and sesame seeds (1/2 Tbsp). Next, add the seasoning ingredients: vinegar (1.5 Tbsp), gochugaru (1 Tbsp), sesame oil (1/2 Tbsp), soy sauce (1/2 Tbsp), oligosaccharide (1 Tbsp), and gochujang (1 Tbsp, packed). Mix everything well with a spoon to create a delicious dressing.

4. Add the prepared cucumber and onion to the dressing. Gently toss to coat the cucumber and onion evenly with the seasoning. Be careful not to mix too vigorously, as this can make the cucumbers mushy. Finally, taste the salad and adjust the seasoning with a pinch of fine salt if needed. Your delicious cucumber salad is ready! You can enjoy it immediately, or chill it in the refrigerator for a refreshing treat.
