Muffin Batter Ingredients- 120g Cake Flour (sifted)
- 120g Unsalted Butter (softened to room temperature)
- 120g Sugar
- 2 Eggs (room temperature)
- 2g Baking Powder
- 2g Salt
Cooking Instructions
Step 1
First, in a bowl, combine 120g of unsalted butter, softened to room temperature, and 120g of sugar. Cream them together using a whisk until the mixture is light and fluffy, like a smooth cream. It’s important to incorporate air by whipping to ensure the sugar dissolves well into the butter.
Step 2
Add one room-temperature egg to the creamed butter and sugar mixture. Mix slowly to prevent the batter from separating. If it looks a bit lumpy at first, don’t worry; keep mixing until it’s well incorporated.
Step 3
Once the first egg is partially mixed, add the second room-temperature egg. Continue mixing slowly, just like before, until all the ingredients are smoothly combined into a uniform batter. Whisk thoroughly until everything is beautifully integrated.
Step 4
In a separate bowl, sift together 120g of cake flour, 2g of baking powder, and 2g of salt. Add these sifted dry ingredients to the wet mixture. Gently fold them in with a spatula until just combined, with no dry flour streaks visible. Be careful not to overmix, as this can make the muffins tough.
Step 5
Transfer the muffin batter into a piping bag or a zip-top bag with a corner snipped off. Fill each muffin liner about 80% full, leaving some space for the muffins to rise as they bake. This ensures they don’t overflow.
Step 6
Bake in a preheated oven or air fryer at 180°C (350°F) for 15-20 minutes. To check if they are done, insert a skewer into the center; if it comes out clean, they are ready. Once baked, remove the muffins from the pan and let them cool completely on a wire rack.
Step 7
While the muffins cool, gently melt 100-150g of yellow coating chocolate in a double boiler or microwave. Once melted and smooth, dip the top of each cooled muffin into the melted chocolate, allowing any excess to drip off. This creates Pikachu’s yellow base.
Step 8
Before the yellow chocolate coating hardens, use chocolate pens to draw Pikachu’s eyes, nose, mouth, and characteristic rosy cheeks. Black chocolate pen for the facial features and a red or pink pen for the blush will make your Pikachu look lively. You can also attach small chocolate balls for the eyes for an extra cute touch.
Step 9
To create Pikachu’s iconic ears, you can insert sliced almonds gently into the top of the muffin, or dip whole almonds in a little melted chocolate, let them set slightly, and then attach them. Your adorable Pikachu muffins are now complete! Enjoy your delightful creation!
