Pizza Ingredients- 1 medium sweet potato
- 1 tortilla
- 1 Tbsp mayonnaise
- Honey (adjust to sweet potato’s sweetness)
- Radish (for garnish, to taste)
- Mixed nuts (to taste)
- Shredded mozzarella cheese (generous amount)
Cooking Instructions
Step 1
First, prepare the star ingredient: the sweet potato. Peel the sweet potato thoroughly and cut it into bite-sized chunks, about 2-3 cm thick. Bring a pot of water to a rolling boil in a steamer. Once the steam is strong, carefully place the sweet potato pieces into the steamer. Steam for about 15-20 minutes, or until a chopstick can be easily inserted into the sweet potato, indicating it’s tender and fully cooked. Drain the sweet potatoes and transfer them to a bowl. While still warm, mash them using a spoon or fork. Add honey to enhance the natural sweetness of the sweet potato. The amount of honey can be adjusted based on how sweet your sweet potato is. Mashing while warm makes it easier to achieve a smooth puree. This will form our delicious sweet potato base.
Step 2
Next, prepare the tortilla, which will serve as the pizza crust. Spread 1 tablespoon of mayonnaise evenly over the surface of the tortilla. Applying mayonnaise will help keep the tortilla moist and tender after baking, making it even more enjoyable to eat, especially for children.
Step 3
Generously spread the mashed sweet potato puree over the prepared tortilla. Use a spoon or spatula to spread it evenly all the way to the edges. Once the sweet potato base is applied, sprinkle a generous amount of mozzarella cheese over it for that classic pizza flavor and meltiness. We also added some raisins and pineapple chunks from the fridge, but feel free to use other dried fruits or any ingredients you have on hand. Get creative with your leftovers to make a unique pizza!
Step 4
On top of the mozzarella cheese, arrange some thinly sliced radish (or small radishes) for a fresh, crisp texture and a pop of color. Slicing the radish thinly or quartering it will look appealing and add a nice balance to the flavors. You can adjust the amount or omit it if you prefer.
Step 5
With all the toppings in place, it’s time to cook the pizza! While an air fryer is recommended, a microwave works perfectly well too. If using an air fryer, bake at 180°C (350°F) for about 5-8 minutes. Cooking times may vary depending on your specific appliance, so keep an eye on it until the cheese is melted and bubbly and the edges are slightly golden. If using a microwave, heat just until the cheese is fully melted. Since radish is typically eaten raw, it’s perfectly fine if it doesn’t cook through.
Step 6
Carefully remove the pizza from the oven or microwave once the cheese is melted and the pizza is heated through. Enjoy your delicious sweet potato pizza! The combination of sweet and soft sweet potato, creamy cheese, and crisp radish is truly wonderful. This healthy sweet potato pizza is perfect as a nutritious snack for kids or even a light meal. Don’t miss out on trying this delightful recipe!
