Homemade Potato Salad: The Perfect Match for Soft Morning Buns!
This is a fantastic nutritious snack for kids! Neatly wrapped in plastic wrap, it’s easy for anyone to grab and enjoy. It also makes a wonderful addition to lunchboxes. You can savor a fresher and richer flavor compared to store-bought salad buns.
Main Ingredients- 5 medium potatoes
- 3 medium eggs
- 3 strips of imitation crab meat (surimi)
- 3 Korean green chili peppers (adjust to your spice preference)
- 1/2 cucumber
- 1/2 apple
- 1/2 onion
Dressing & Seasoning- 6 Tbsp mayonnaise
- 3 Tbsp sugar
- 1/2 Tbsp salt
- 1 tsp black pepper

Cooking Instructions
Step 1
In a deep pan, add about 1 cup of water and line it with parchment paper. Place the washed potatoes and eggs side-by-side in the pan, cover with a lid, and cook over medium heat for approximately 30 minutes until tender. After 30 minutes, gently pierce with a chopstick or fork to check if they are cooked through; they should be soft.
Step 2
While the potatoes and eggs are cooking, prepare the vegetables, imitation crab meat, and apple for the salad.
Step 3
Finely dice the prepared imitation crab meat, Korean green chili peppers, cucumber, apple, and onion after washing and drying them thoroughly. Removing the seeds from the chili peppers will reduce their spiciness.
Step 4
Carefully peel the skins off the cooked potatoes and eggs while they are still warm. Avoid mashing them; instead, use two spoons to gently press and break them into bite-sized pieces. Mashing them too finely might affect the texture.
Step 5
Add the mayonnaise, sugar, salt, and pepper to the mashed potatoes and eggs. Mix gently until evenly combined. Then, add the finely diced ingredients and mix again softly to create your delicious potato salad.
