Ingredients- 15 cloves garlic, sliced thickly
- 15 large shrimp, peeled and deveined
- 250ml (about 1 cup) Extra Virgin Olive Oil
- Salt, to taste
- Black pepper, freshly ground
- 8 dried red chili flakes (peperoncino)
- Baguette slices, for serving
- Fresh parsley, chopped (for garnish)
Cooking Instructions
Step 1
First, peel the garlic cloves and slice them about 0.5 cm thick. Slicing them thickly allows the garlic flavor to infuse beautifully into the olive oil without burning too quickly.

Pat the peeled and deveined shrimp dry with paper towels, then season them generously with salt and freshly ground black pepper. Letting them marinate for a few minutes enhances their natural sweetness.

In a skillet or clay pot (cazuela) suitable for stovetop use, pour in the extra virgin olive oil. You want enough oil to generously coat the bottom and come partway up the sides, as the shrimp and garlic will cook in it.

Add the sliced garlic to the cold olive oil. Place the skillet over low to medium-low heat. Gently simmer the garlic, allowing it to slowly become fragrant and turn a pale golden color. Be careful not to burn the garlic, as this will make it bitter. This slow infusion is key to the dish’s flavor.

Once the garlic is fragrant and starting to soften, add the dried red chili flakes and the seasoned shrimp to the skillet. Increase the heat slightly to medium.
