I absolutely love Gambas, but I’ve realized that not many people are familiar with this wonderful dish. To share this delightful culinary experience with more people, I’ve created a special recipe that allows you to make it easily in the microwave, without any need for a gas stove. It’s perfect for a quick yet elegant meal!

Main Ingredients

  • 10 fresh shrimp (medium or tiger shrimp recommended)
  • 5 cloves garlic (if using whole cloves, lightly crush them)
  • 100ml extra virgin olive oil (use a flavorful one)

Additional Ingredients

  • 50g oyster mushrooms (tear into bite-sized pieces)
  • 1 red chili pepper (for a touch of heat)
  • 5 dried chili flakes (adjust to your spice preference)
  • 1/8 onion (finely diced)

Seasoning

  • 2 tsp salt
  • 1 tsp black pepper (freshly ground is best for aroma)
  • 1 tsp soy sauce (adds depth of flavor)

Cooking Instructions

Begin by thoroughly washing all your ingredients, except for the dried chili flakes which will be added later.

Prepare each ingredient: For the shrimp, remove the shells and devein them. Lightly season with 1 tsp soy sauce and a pinch of pepper. Slice the garlic thinly. Tear the oyster mushrooms into bite-sized pieces. Finely dice the onion, and thinly slice the red chili pepper diagonally.

In a microwave-safe pot or dish, combine the 100ml of olive oil and the sliced garlic. Microwave for 4 minutes. This step infuses the oil with the aromatic flavor of garlic.

Carefully remove the dish from the microwave. Add the seasoned shrimp, diced onion, torn oyster mushrooms, dried chili flakes, 2 tsp salt, and 1 tsp black pepper to the garlic-infused oil. Stir everything together to combine, then return to the microwave and heat for another 3 minutes.

Once cooked, gently stir the Gambas to ensure all ingredients are well mixed and heated through. Carefully transfer the hot Gambas to your serving plate. For an extra touch, you can sprinkle some parsley flakes. Serve immediately, perhaps with crusty baguette slices to soak up the delicious garlic-infused oil!
