* This recipe was provided as part of the National Health Insurance Service expert writer’s series in December 2020. * This is a hearty and nutritious donburi that’s perfect for a satisfying meal. The delightful chewy texture of the sea kelp combined with the plumpness of the shrimp makes for an exciting culinary experience.
Main Ingredients- 1 bowl of warm cooked rice
- 1/2 medium onion, thinly sliced into strips
- 6 peeled and deveined shrimp
- 2 pieces of dried kelp (rehydrated and thinly sliced)
Flavorful Soy Sauce Glaze- 300ml water
- 2 Tbsp soy sauce
- 1/2 Tbsp sugar (or to taste)
- 2 Tbsp mirin (sweet cooking wine)
- 300ml water
- 2 Tbsp soy sauce
- 1/2 Tbsp sugar (or to taste)
- 2 Tbsp mirin (sweet cooking wine)
Cooking Instructions
Step 1
In a pot, combine 300ml water, 2 Tbsp soy sauce, 1/2 Tbsp sugar, and 2 Tbsp mirin. Stir well to create the flavorful soy sauce glaze. Place this mixture over medium-low heat and bring to a gentle simmer. Once it starts boiling, reduce the heat to low and let it simmer until the sauce thickens slightly. This process deepens the umami flavor and ensures the sauce coats the ingredients beautifully.
Step 2
While the sauce is simmering, taste it and adjust the sugar if you prefer a sweeter profile. The sweetness of this shrimp donburi can be customized to your preference, so find the perfect balance for your palate.
Step 3
Once the soy sauce glaze has thickened to your liking, add the thinly sliced onion, rehydrated and sliced kelp, and the prepared shrimp to the pot. Cook over medium heat until the ingredients are tender. The onions should become translucent, and the shrimp should turn pink and opaque. Avoid overcooking the kelp to maintain its pleasant chewy texture.
Step 4
When all the ingredients are cooked through, gently pour a whisked egg mixture (about 1-2 eggs) evenly over the donburi. Immediately cover the pot with a lid and cook over low heat until the egg is softly set, similar to a custard. Once the egg is cooked to your desired consistency, turn off the heat. For an extra touch of color and freshness, garnish with finely chopped green chilies, red chilies, or toasted sesame seeds. Your delicious Sea Kelp Shrimp Donburi is now ready to be served over a bowl of warm rice!
