  • 1 cup Soy Sauce (200ml)
  • 1/2 cup Mirin (or cooking wine) (100ml)
  • 1 1/2 cups Water (300ml)
  • 1 Tbsp Sugar (adjust to taste)
  • 1 piece Ginger (thinly sliced)
  • 3 cloves Garlic (thinly sliced)
  • 1/2 stalk Green Onion (white part preferred, cut into large pieces)
  • 1/2 Onion (cut into large pieces)
  • A pinch of Whole Peppercorns (about 10)
  • 1 Dried Red Chili Pepper (broken, seeds removed)
