Garlic scapes are in season right now! Stir-frying them lengthwise gives them a lovely texture reminiscent of sautéed greens, and enhances their delightful crunch. Try making your garlic scape stir-fry in a unique, elongated style for a delightful meal.
Main Ingredients- 1 bundle garlic scapes (approx. 200g)
- 50g carrot (approx. 1/4 medium carrot)
Stir-Frying Sauce- 3 Tbsp soy sauce
- 1.5 Tbsp oyster sauce
- 0.5 Tbsp minced garlic
- 0.5 Tbsp brown sugar
- 1/3 cup water (approx. 60ml)
- 2 Tbsp plum extract (maesilcheong)
- 1 Tbsp corn syrup or honey
- A drizzle of sesame oil
- A sprinkle of toasted sesame seeds
- A little cooking oil
- 3 Tbsp soy sauce
- 1.5 Tbsp oyster sauce
- 0.5 Tbsp minced garlic
- 0.5 Tbsp brown sugar
- 1/3 cup water (approx. 60ml)
- 2 Tbsp plum extract (maesilcheong)
- 1 Tbsp corn syrup or honey
- A drizzle of sesame oil
- A sprinkle of toasted sesame seeds
- A little cooking oil
Cooking Instructions
Step 1
Prepare all your ingredients before you begin cooking. Wash the garlic scapes thoroughly under running water and pat them dry. Peel the carrot.

Make a shallow cut lengthwise along the middle of each garlic scape. Then, gently pull the scape apart from the cut to split it into two long pieces. This method helps to preserve the crisp texture of the garlic scapes.

If you prefer a softer texture or want the seasoning to penetrate more deeply, you can further split the 2-piece garlic scapes lengthwise again, creating 4 thin strips. Feel free to adjust the thickness to your liking.

Cut the prepared carrot into thin matchsticks, similar in length to the garlic scapes. Carrots will add color and a subtle sweetness to the dish when cooked.

Stir-fry everything together, ensuring the sauce evenly coats the garlic scapes.

When the garlic scapes begin to wilt slightly and soften, add the julienned carrots to the pan. Continue to stir-fry them together. The carrots will cook and contribute to the delicious texture alongside the garlic scapes.
