Ingredients

  • 1/2 block firm tofu (approx. 150-200g)
  • 2-3 stalks scallions
  • 1/3 green bell pepper (seeds removed)
  • 1/3 red bell pepper (seeds removed)
  • 3 large eggs (room temperature)
  • 1/2 tsp salt (or to taste)
  • Pinch of black pepper
  • 1 Tbsp cornstarch or potato starch
  • 1 Tbsp butter

Cooking Instructions

Step 1

First, prepare half a block of tofu. Draining the tofu is crucial to prevent it from clumping and to ensure a tender scramble. Cut the tofu into bite-sized pieces or pieces suitable for mashing, then place it in a sieve to drain, or press it gently with paper towels.

Step 1

Step 2

Wash and finely chop 2-3 stalks of scallions. Using both the green and white parts will add color and enhance the flavor.

Step 2

Step 3

Prepare about 1/3 each of a green bell pepper and a red bell pepper. Remove the seeds and finely dice them. Using a variety of colors can attract children’s interest and make the meal more visually appealing.

Step 3

Step 4

Crack 3 large eggs into a bowl. Using fresh eggs will result in a creamier and more delicious scramble.

Step 4

Step 5

Add the drained tofu to the bowl with the eggs. Use a fork or a mashing tool to crush the tofu until it’s smooth and lump-free, blending well with the eggs. Thorough mashing ensures the tofu integrates seamlessly.

Step 5

Step 6

Add 1/2 teaspoon of salt to season. If preparing for children, it’s best to start with less salt and adjust later according to taste.

Step 6

Step 7

Add a pinch of black pepper. Freshly ground black pepper offers a better aroma. Adjust the amount according to your preference, just a few twists.

Step 7

Step 8

Add 1 tablespoon of starch (cornstarch or potato starch) and mix everything thoroughly until well combined. The starch helps bind the tofu and egg mixture and contributes to a tender texture.

Step 8

Step 9

Now, heat a pan or wok over medium heat and melt 1 tablespoon of butter. The butter will add a lovely richness and savory flavor to the tofu egg scramble.

Step 9

Step 10

Once the butter is melted, pour the prepared egg and tofu mixture into the pan. Let it cook undisturbed until the edges begin to set. Then, gently stir and scramble until cooked through and fluffy. Maintain medium heat throughout the cooking process.

Step 10

Step 11

When the tofu and egg are almost fully cooked, add the finely diced bell peppers, red bell peppers, and scallions. Stir-fry for about 1 more minute. Quickly stir-frying prevents the vegetables from becoming soggy and keeps them crisp and colorful. This completes your delicious scramble!

Step 11

Step 12

Transfer the finished tofu and egg scramble to a nice serving dish. You’ll have a healthy and delicious meal ready to enjoy. It’s fantastic as a children’s snack or a hearty breakfast!
