How to Make a Deliciously Savory and Fragrant Chives and Crab Stick Egg Pancake
When thinking about breakfast side dishes, eggs are always the first thing that comes to mind! While simply frying them is delicious, I absolutely love adding chives for an extra layer of flavor. Today, we’ll be making a Chives and Crab Stick Egg Pancake. The addition of crab sticks adds a beautiful color, and it makes for a wonderful lunchbox side dish as well.
Ingredients- 3 large eggs
- 1 handful of fresh chives (about 30g)
- 2 sticks of imitation crab meat
- 2 pinches of salt
Cooking Instructions
Step 1
First, wash the fresh chives thoroughly, pat them dry, and then roughly chop them into bite-sized pieces, about 1-2 cm long. Chopping them a bit larger will give you a nice texture when you bite into the pancake.
Step 2
Next, tear the imitation crab meat sticks into shreds along their natural lines, or simply break them into pieces about 1 cm thick. Cutting them to a similar size as the chives will help them mix evenly into the pancake and look more appealing.
Step 3
In a wide bowl, crack open the 3 fresh eggs. Add the chopped chives and torn crab sticks. Season with 2 pinches of salt to taste. (You can also add a little black pepper if you like.)
Step 4
Using chopsticks or a whisk, mix everything together as evenly as possible. It’s important to break up the egg yolks and whites completely and ensure the chives and crab sticks are well distributed so they don’t separate when cooking.
Step 5
Heat about 1-2 tablespoons of cooking oil in a non-stick pan over medium heat. Use a paper towel to spread the oil thinly and evenly across the entire surface of the pan. Once the oil is slightly shimmering, pour in the egg mixture. Use a spatula or spoon to spread it out evenly into your desired shape, such as a circle or rectangle. A tip for even cooking is to not make the pancake too thick.
Step 6
When the edges of the egg pancake start to turn golden brown, carefully flip it over using a spatula or chopsticks. Cook the other side until it’s also golden brown. Flipping it back and forth gently will ensure it’s cooked evenly through and delicious.
Step 7
Once beautifully cooked, cut the Chives and Crab Stick Egg Pancake into serving pieces and arrange them on a plate. You’ll have a delicious and visually appealing breakfast side dish or snack ready to enjoy!
