Enjoy the rich flavor of crispy pork cutlets bathed in a savory, comforting broth. This Donkatsu Kimchi Nabe offers a perfect balance of satisfying richness from the cutlet and a refreshing, clean taste from the kimchi stew, preventing it from feeling too heavy.
Main Ingredients- 1 handful aged/sour kimchi (about 200g)
- 1/2 onion
- 1/2 stalk green onion
- 1 pork cutlet (store-bought or homemade)
- 1 egg

Step 1
First, finely chop the kimchi into bite-sized pieces. Thinly slice the onion. Mince the green onion for garnish.

Prepare the pork cutlet in advance. You can cook it until golden brown using an air fryer, oven, or frying pan. Using a store-bought cutlet will make this dish even quicker to prepare.

In a deep pan or pot, add a little cooking oil and minced garlic. Sauté over medium-low heat until fragrant. Then, add the chopped kimchi and stir-fry until softened. To balance the sourness of the kimchi, add 1/2 tablespoon of sugar and stir-fry together. Adjust the sugar amount based on how sour your kimchi is.

Once the kimchi is well-softened, add the sliced onions and stir-fry lightly until they become translucent.

Pour in 200ml of water and bring it to a boil over high heat.

Once the stew starts boiling, reduce the heat to medium and add 1 tablespoon of gochugaru and 1 tablespoon of fish sauce to season. Since the saltiness of kimchi varies by household, taste and adjust the seasoning with more fish sauce or soy sauce for soup as needed. For an extra layer of flavor, you can also add a little bit of kimchi juice.

Cut the pre-cooked pork cutlet into bite-sized pieces and arrange them nicely on top of the stew. The cutlet will soak up the broth and become tender.

Gently beat the egg and drizzle it around the edges of the pot. As the egg cooks, it will enrich the broth and make it creamier.
