Ingredients

  • 1 bunch chives (about 100g)
  • 2 cleaned octopuses (about 150g)
  • 1 cup pancake mix (buchim garu, approx. 120g)
  • 1 cup튀김가루 (tempura powder, approx. 100g)
  • 2 eggs
  • Cold water (for adjusting batter consistency)
  • Cooking oil (generous amount)

Cooking Instructions

First, finely chop the cleaned octopus into small pieces, about 0.5cm thick. Cut the chives into approximately 3-4cm lengths. Having your ingredients prepped will make the cooking process much smoother.

In a large bowl, combine 1 cup of pancake mix and 1 cup of tempura powder. Using tempura powder helps achieve an extra crispy texture. Crack in the 2 eggs. Gradually add cold water while mixing, until you reach your desired batter consistency. It should be thick enough to pour but still flow, not too watery. (You might need around 1.5 cups of water, but adjust based on how your flour absorbs liquid.)

Add all the chopped chives and octopus to the batter. Gently mix everything together with a spatula or spoon, ensuring the ingredients are evenly distributed. Be careful not to clump the chives together.

Heat a frying pan over medium heat and add a generous amount of cooking oil. Ladle one portion of the batter onto the hot pan and spread it out thinly. Once the edges of the batter start to look slightly firm and cooked, quickly flip it over with a spatula. Cook the other side until it’s also golden brown and crispy, for about 3-4 minutes more. Your delicious chive and octopus pancake is ready!
