  • 1 shiitake mushroom (for garnish, optional)

  • 1 paper cup of water (approx. 120ml)
  • 1/2 tsp minced garlic
  • 1 Tbsp tuna extract (or Korean soy sauce for soup)
  • 1/2 tsp sugar

Cooking Instructions

Step 1

In a bowl, crack 2 fresh eggs. Add 1 paper cup (approx. 120ml) of water, 1/2 tsp minced garlic, 1/2 tsp sugar, and 1 Tbsp tuna extract. Gently whisk everything together until just combined. Avoid over-whisking to prevent excessive bubbles. For an extra smooth texture, strain the mixture through a fine-mesh sieve twice.

Prepare your steaming vessel. A ceramic or heat-resistant glass bowl with a lid works best. Pour the egg mixture into the bowl, filling it to about 80% capacity. (If you have Japanese ‘Chawanmushi’ bowls, two of them would be the perfect size. A regular soup bowl is also a good option.)

Set up your steamer. Place a rack or steamer basket inside a pot and add enough water. Once the water comes to a boil, carefully place the bowl(s) containing the egg mixture onto the rack. Cover the pot tightly with a lid. Reduce the heat to low and steam for 13 minutes. Ensure the heat is low to prevent large bubbles from forming on the surface, ensuring a smooth finish.

After 13 minutes, turn off the heat and let it rest. Thinly slice the shiitake mushroom and lightly sauté it, or prepare any other desired garnish (like shrimp or peas). Arrange the garnish on top of the steamed egg custard to complete the dish. The garnish is optional; the custard is delicious on its own.
