Cooking Instructions

Step 1

First, prepare all the ingredients needed for Yurin-gi. You’ll need 400g of chicken thigh or breast, lettuce, eggs, panko breadcrumbs, Cheongyang peppers, an onion, and bell peppers.

Step 1

Step 2

Rinse the chicken pieces thoroughly under running water and pat them dry. You can remove the skin or cut the chicken into bite-sized pieces as desired.

Step 2

Step 3

Drizzle 1 Tbsp of Mirin over the chicken. Mirin helps to remove any gamey odor and tenderizes the meat.

Step 3

Step 4

Sprinkle a pinch of salt over the chicken. Be careful not to add too much.

Step 4

Step 5

Add a pinch of black pepper for flavor and gently toss the chicken to ensure the marinade is evenly distributed. Let it marinate for about 10 minutes.

Step 5

Step 6

Peel the onion and slice it thinly into julienne strips. The thinner the strips, the better the texture.

Step 6

Step 7

Place the julienned onion in a bowl with 1 cup of water and 1 Tbsp of salt. Soak for about 5 minutes to remove its pungency and enhance its crispiness. Afterward, drain the onion well.

Step 7

Step 8

Add 2 eggs to the marinated chicken pieces.

Step 8

Step 9

Mix the chicken and eggs thoroughly with your hands until a slightly sticky batter forms. This batter will help the panko adhere well to the chicken.

Step 9

Step 10

Prepare a large plastic bag. This will help prevent panko from scattering when coating the chicken and ensure an even coating.

Step 10

Step 11

Pour 1 cup of panko breadcrumbs into the plastic bag first.

Step 11

Step 12

Place the batter-coated chicken pieces into the bag with the panko.

Step 12

Step 13

Add the remaining 1 cup of panko on top of the chicken. Seal the bag tightly and shake, or press down firmly to ensure the chicken is generously and evenly coated with panko. A thicker coating will result in a crispier texture.

Step 13

Step 14

Pour a generous amount of cooking oil into a deep pot or wok and heat it to 160°C (320°F). Using a thermometer can be helpful to maintain the correct oil temperature.

Step 14

Step 15

Carefully place the panko-coated chicken pieces into the hot oil and fry until golden brown. Avoid overcrowding the pot, as this can lower the oil temperature and make the chicken soggy. Fry in batches if necessary.

Step 15

Step 16

For an extra crispy texture, you can fry the chicken pieces twice. After the first fry, remove them from the oil, increase the oil temperature to 170°C (340°F), and re-fry for about 30 seconds to 1 minute. Double frying ensures a super crispy exterior while keeping the inside moist.

Step 16

Step 17

Once fried to perfection, transfer the chicken to a wire rack or paper towels to drain off excess oil. Yurin-gi is best enjoyed while still warm.

Step 17

Step 18

Prepare the sauce ingredients: Finely mince the red and yellow bell peppers. Their vibrant colors will enhance the visual appeal of the sauce.

Step 18

Step 19

Thinly slice the 2 Cheongyang peppers. Adjust the quantity to your preference for spiciness.

Step 19

Step 20

In a bowl, combine 4 Tbsp soy sauce, 2 Tbsp lemon juice, 4 Tbsp vinegar, 4 Tbsp sugar, 1 Tbsp minced garlic, and a pinch of black pepper. Whisk well. Add the minced Cheongyang peppers and minced bell peppers. Stir until the sugar is completely dissolved. This sauce offers a perfect balance of sweet, sour, and spicy flavors that complement the fried chicken.

Step 20

Step 21

Arrange the washed and drained lettuce leaves attractively on a serving plate or platter. The crispness of the lettuce provides a refreshing contrast to the chicken.

Step 21

Step 22

Neatly place the julienned onion on top of the lettuce.

Step 22

Step 23

Arrange the cut, crispy fried chicken pieces generously over the lettuce and onion. The golden-brown, crunchy chicken looks very appetizing.

Step 23

Step 24

Just before serving, drizzle the prepared tangy sauce evenly over the chicken. It’s important to add the sauce right before eating to maintain the crispiness of the fried coating.

Step 24

Step 25

Your impressive and delicious Yurin-gi is ready! It’s perfect for entertaining guests or as a delightful snack with drinks. Enjoy your meal!
