These citron scones are wonderfully aromatic, savory, and light, making them the perfect accompaniment to a cup of coffee. Scone Dough Ingredients- 200g low-gluten flour (cake flour)
- 15g baking powder
- 20g granulated sugar
- 2g salt
- 65g cold unsalted butter (cut into cubes)
- 50ml cold milk
- 1 large egg (beaten)
- 40g citron preserves (drained slightly)
Cooking Instructions
Step 1
First, in a large bowl, sift together the low-gluten flour, baking powder, and sugar. Add the cubed cold unsalted butter to the bowl. Using a scraper or your fingertips, rub the butter into the dry ingredients until the mixture resembles coarse breadcrumbs. Once well combined, pour in the cold milk and the beaten egg. Gently mix with a spatula, cutting through the ingredients, until a dough just begins to come together. Avoid overmixing at this stage.
Step 2
As the dough starts to form clumps, add the drained citron preserves. Fold them into the dough gently with the spatula, ensuring they are evenly distributed throughout. Continue mixing just until the citron pieces are incorporated and the dough is uniform.
Step 3
Transfer the dough into plastic wrap or a piping bag and refrigerate for at least 30 minutes. This chilling period helps the butter firm up again, contributing to the scone’s crisp texture. Once chilled, place the dough on a lightly floured surface and roll it out evenly to a thickness of about 1.5cm to 2cm. Use a round cookie cutter or a knife to cut out your desired scone shapes.
Step 4
Arrange the cut scone dough pieces on a baking sheet lined with parchment paper, leaving some space between them. Lightly brush the tops of the scones with a thin layer of the beaten egg wash; this will give them a beautiful golden-brown color when baked.
