Main Ingredients- 2 sheets of Gim (seaweed for gimbap)
- 1 fresh cucumber
- 200g oyster mushrooms (or king oyster mushrooms)
- 1 serving of cooked rice
- 1 Tbsp sesame oil
- Pinch of salt

- 1 Tbsp soy sauce
- 0.5 Tbsp oligodang (corn syrup)

Cooking Instructions
Step 1
First, gently rub the cucumber’s surface with salt to remove any prickly bits, then wash it thoroughly. Cut the cucumber in half lengthwise, and then use a spoon to carefully scoop out and remove the seeds from the center. This step helps prevent the gimbap from becoming soggy.
Step 2
Slice the deseeded cucumber into pieces of a suitable thickness for gimbap filling. Sprinkle the sliced cucumber with salt and let it sit for about 10 minutes to draw out moisture. After salting, it’s important to remove excess water. Use paper towels or a clean kitchen cloth to pat the cucumber slices dry.

Heat a frying pan with a little cooking oil over medium-high heat. Add the dried cucumber slices and stir-fry for about 1 minute. Be careful not to overcook, as they can become mushy! Transfer the stir-fried cucumber to a separate bowl and let it cool down slightly.
