Introducing a recipe for crisp and fragrant stir-fried chives that perfectly complements rich samgyeopsal (pork belly). With a refreshing sweet, sour, and spicy dressing, anyone can easily follow along.
Stir-Fried Chives Ingredients- 50g chives, trimmed and cleaned
- 1/2 small onion, thinly sliced
- 1/4 small carrot, julienned thinly
Stir-Fried Chives Dressing Ingredients- 1.5 Tbsp gochugaru (Korean chili flakes)
- 1 Tbsp sugar
- 1 Tbsp soy sauce
- 1 Tbsp vinegar
- 1 Tbsp sesame oil
- 1/2 Tbsp toasted sesame seeds
- 1.5 Tbsp gochugaru (Korean chili flakes)
- 1 Tbsp sugar
- 1 Tbsp soy sauce
- 1 Tbsp vinegar
- 1 Tbsp sesame oil
- 1/2 Tbsp toasted sesame seeds
Cooking Instructions
Step 1
Thinly slice half of a small onion. If you find raw onion too pungent or sharp, you can soak the sliced onion in cold water for about 5 minutes, then drain thoroughly before using. This will mellow out the flavor significantly. I opted to use it without soaking.
Step 2
Julienne the carrot as thinly as possible so it blends well with the onion. I added carrots for color, but if you dislike them or don’t have them on hand, feel free to omit them. The chives and dressing alone make a delicious dish.
Step 3
While chives sold commercially are usually pre-cleaned, it’s essential to wash them thoroughly under running water to remove any dirt or debris. Place the trimmed chives in a bowl and fill with water. Gently hold the middle of the chive bunch and swish it around to dislodge any impurities. Repeat this process 3-4 times. Wash both the root and leaf tips using the same method. Since chives can become limp quickly, it’s best to wash only the amount you plan to use immediately.
Step 4
After washing, lightly shake off excess water and place the chives on a cutting board. Trim off the very bottom ends near the root.
Step 5
Cut the chives into bite-sized pieces. I cut mine into lengths of about 5-6 cm. You can adjust this to your preference.
Step 6
In a large bowl, combine the thinly sliced onion, the cut chives, and the julienned carrots.
Step 7
Add all the dressing ingredients (gochugaru, sugar, soy sauce, vinegar, sesame oil, and sesame seeds) to the bowl. Gently toss the ingredients by hand to combine, being careful not to mash the chives. Over-mixing or vigorous tossing can release a raw smell from the chives, so a light, airy mix is best. This dish is most delicious when served immediately after mixing.

Your fragrant and flavorful stir-fried chives are ready! Serve them immediately with grilled samgyeopsal to cut through the richness and enhance your appetite. Enjoy this perfect side dish!
