Main Ingredients- 100g Spam (1 can)
- 1 large potato
- 1/4 medium onion
- 1/5 small zucchini
- 4.3 cups (approx. 860ml) anchovy-kelp broth
Seasoning- 1.5 Tbsp Gochujang (Korean red chili paste)
- 1 tsp Doenjang (Korean soybean paste)
- 1/3 Tbsp sugar
- 1 Tbsp Gochugaru (Korean red chili flakes)
- 1 Tbsp Mirin (or cooking wine)
- Pinch of black pepper
- 1.5 Tbsp minced garlic
- 1 tsp soup soy sauce
- 1.5 Tbsp Gochujang (Korean red chili paste)
- 1 tsp Doenjang (Korean soybean paste)
- 1/3 Tbsp sugar
- 1 Tbsp Gochugaru (Korean red chili flakes)
- 1 Tbsp Mirin (or cooking wine)
- Pinch of black pepper
- 1.5 Tbsp minced garlic
- 1 tsp soup soy sauce
Cooking Instructions
Step 1
First, prepare the key ingredients for the stew by cutting them into bite-sized pieces. Dice the onion, potato, and zucchini into approximately 1.5cm cubes, which makes them easy to scoop up with the broth.
Step 2
Dice the Spam into roughly 1.5cm cubes as well. (Alternatively, you can mash the Spam; mashing it helps its flavor infuse more deeply into the broth!) Place the diced Spam directly into the pot.
Step 3
Add the cubed potatoes to the pot. The potatoes will cook down and become tender, adding their natural sweetness and body to the stew’s broth.
Step 4
Pour in 4.3 cups of anchovy-kelp broth. Now, turn on the heat and get ready to simmer. If you don’t have broth, using rice water or plain water is also acceptable.
Step 5
Add all the seasoning ingredients except for the minced garlic into the pot. Stir well with a spoon or ladle to ensure the Gochujang dissolves evenly without clumps. Adding a little Doenjang will enhance the savory depth of flavor.
Step 6
Begin simmering the stew over medium-high heat. Once the broth reaches a rolling boil, add the 1.5 Tbsp of minced garlic and stir again. The garlic will add a wonderful aroma and enhance the overall flavor profile.
Step 7
When the potatoes start to look translucent and are about halfway cooked, add the diced onion. The onion will release its natural sweetness, helping to balance the flavors in the stew.
Step 8
Now, reduce the heat to low and let the stew simmer gently, either covered or uncovered, until it’s thoroughly cooked. This slow simmering allows the flavors of the potatoes and Spam to meld beautifully into the broth.
Step 9
Once the potatoes are fork-tender and the delicious essence of the Spam has permeated the broth, taste the stew and adjust the seasoning if needed. If it’s not salty enough, you can add a tiny bit more soup soy sauce or salt.

Finally, add the sliced zucchini. It will be simmered for just a short while longer. Adding zucchini at the end prevents it from becoming too mushy.

After adding the zucchini, bring the stew back to a simmer over medium-high heat for a moment. It’s ready when the zucchini is tender-crisp! (If you prefer a thicker, more concentrated flavor, you can reduce the broth slightly to achieve a texture between a stew and a ‘jjigae-jjolyeok’, which is also incredibly delicious!)
