Main Ingredients- 400g Pasta (Spaghetti recommended)
- 600g Arrabbiata Sauce (store-bought or homemade)
- 400g Mixed Seafood (shrimp, squid, mussels, etc., thawed if frozen)
- 2/3 medium Onion, finely chopped
- 8 cloves Garlic, thinly sliced or minced
Cooking Instructions
Step 1
First, lightly rinse the mixed seafood under cold water to remove any ice crystals, then pat it dry. Season it generously with 1 Tbsp of black pepper. This step helps to eliminate any unpleasant odors from the seafood and enhances its natural flavor.
Step 2
Fill a large pot with plenty of water and add 1 Tbsp of coarse salt. Bring the water to a rolling boil over high heat. Once boiling, add 400g of pasta and cook for approximately 8 minutes, or about 1 minute less than the package instructions. Aim for an ‘al dente’ texture, meaning the pasta should still have a slight bite.
Step 3
While the pasta is cooking, reserve about 2 ladlefuls of the starchy pasta water before draining. This pasta water is a secret weapon for achieving the perfect sauce consistency. Drain the pasta and toss it with 2 Tbsp of olive oil to prevent it from sticking together. It’s best to do this quickly while the pasta is still warm.
Step 4
Heat 4 Tbsp of olive oil in a large skillet or frying pan over medium heat. Add the sliced or minced garlic and sauté until it’s fragrant and lightly golden brown, being careful not to burn it. Infusing the oil with garlic is key to developing a rich flavor base.
