Cooking Instructions
Step 1
The first crucial step is to properly clean the fresh oysters. Place the oysters in a bowl and cover them with water. Then, add 1 tablespoon of coarse salt. Adding salt after water helps to gently clean the oysters without damaging their delicate texture, unlike rubbing with salt directly in dry conditions.
Step 2
Now, gently scrub the oysters with your fingertips to remove any impurities. Be careful not to rub too hard, as this can break them.

Rinse the gently scrubbed oysters under cold running water 2-3 times. After rinsing, transfer the oysters to a colander to drain. It’s important to inspect each oyster carefully for any shell fragments and remove them. Sometimes, small pieces of shell can remain attached.

Ensure the oysters are thoroughly drained to prevent oil splattering during frying. If you’re short on time, pat them dry with paper towels. Excess moisture can lead to a less crispy coating and potentially dangerous splattering.

Let’s make the delicious tartar sauce! In a small bowl, combine 3 tablespoons of mayonnaise, 1 tablespoon of honey, 1 tablespoon of fresh lemon juice, 0.5 tablespoon of Dijon mustard, 1 tablespoon of finely chopped pickles, and a pinch of black pepper.
