Nutrient-Rich Smoked Duck and Vegetable Fried Rice Loved by Little Ones
We made a delicious meal using ingredients we had in the fridge, perfect for our 11-month-old and 35-month-old babies! This recipe is a fantastic way to use up leftover veggies and create a wholesome dish.
Main Ingredients- 5 slices smoked duck
- A little oyster mushroom
- 1/4 carrot
- 1/4 mini kabocha squash
- 1/4 zucchini
- 1 bowl of cooked rice
Seasoning- 1 Tbsp cooking oil
- 2/3 Tbsp red crab soy sauce
- 2/3 Tbsp tuna extract
- 1 Tbsp cooking oil
- 2/3 Tbsp red crab soy sauce
- 2/3 Tbsp tuna extract
Cooking Instructions
Step 1
First, finely chop the smoked duck into bite-sized pieces. Prepare the oyster mushrooms, carrot, mini kabocha squash, and zucchini by dicing them very finely or chopping them small, making them easy for babies to eat. (The smoked duck is already seasoned, so you can skip additional seasoning. If you prefer more flavor, you can add a tiny pinch of salt.)
Step 2
Heat 1 tablespoon of cooking oil in a pan over medium-low heat. Add the chopped smoked duck and all the prepared vegetables. Stir-fry until the vegetables soften and the smoked duck is lightly golden brown. Cooking until the natural oils from the ingredients are released will enhance the flavor.
Step 3
Once the vegetables and smoked duck are well cooked, add 1 bowl of cooked rice. Pour in 2/3 tablespoon of red crab soy sauce and 2/3 tablespoon of tuna extract. Gently break up the rice with a spatula to prevent clumping, and stir-fry until all ingredients are evenly combined. Cooking over medium-low heat rather than high heat will prevent burning and result in a delicious fried rice.
