Cooking Instructions
Step 1
In a large bowl, combine the fresh ground beef and ground pork. Add 1 Tbsp salt, a pinch of black pepper, and 2 Tbsp of cooking wine (mirin) to help remove any gamey odors. Knead the meat mixture thoroughly with your hands until it becomes firm and elastic, much like kneading dough. This crucial step of kneading until it develops a chewy texture is the secret to achieving a juicy Hamburg steak.
Step 2
Divide the well-kneaded meat mixture into 2-3 portions of a suitable size. Shape each portion into a round, flat patty using your palms. Gently press the center of each patty to prevent it from puffing up too much while cooking, ensuring an evenly cooked result.
Step 3
Tear the fresh romaine lettuce leaves into bite-sized pieces. Trim the stems of the shiitake mushrooms, rinse them lightly under running water, and slice them attractively. For the sauce, finely mince a small amount of onion and carrot. Mincing them very finely will help the sauce blend smoothly and evenly.
Step 4
Now, let’s make the Hamburg steak sauce. In a small bowl, combine 7 Tbsp of tonkatsu sauce, 3 Tbsp of ketchup, 1 Tbsp of oligosaccharide for a touch of sweetness, and 100ml of water for moisture. Add a pinch of black pepper, the finely minced carrot and onion, and stir everything together until well combined. This delicious sauce will elevate the flavor of your Hamburg steak.
Step 5
Heat 1 Tbsp of cooking oil in a preheated pan over medium-low heat. Place the prepared Hamburg steak patties in the pan and sear them until golden brown on both sides. Once the exterior is nicely browned, add the sliced shiitake mushrooms and cook them together with the patties. The mushrooms will release their delicious aroma, complementing the meat wonderfully.
Step 6
When the Hamburg steak patties and mushrooms are nearly cooked, pour the prepared Hamburg steak sauce evenly over them in the pan. Let the sauce simmer gently over medium-low heat, allowing it to thicken slightly and meld with the flavors of the patties and mushrooms. To prevent burning, gently shake the pan or stir with a spatula occasionally. The slightly reduced sauce will add a wonderful depth of flavor.
Step 7
It’s time to plate your delicious creation! Arrange the cooked Hamburg steak patties and mushrooms attractively on a plate. Generously spoon the reduced sauce over them. Add the fresh romaine lettuce leaves on the side as a garnish to complete this impressive homemade Hamburg steak. Enjoy this hearty and satisfying meal with a side of warm rice!
