Main Ingredients- 1 head of fresh broccoli
- A generous portion of fresh or cooked cocktail shrimp (to your preference)

- 4-5 cloves whole garlic, thinly sliced

Cooking Instructions
Step 1
Using cocktail shrimp can give your stir-fry a more visually appealing presentation. I used fresh shrimp from my freezer, and while they might not look as picture-perfect, their plump texture and delicious taste were undeniable. Feel free to choose whichever shrimp you prefer!
Step 2
If using frozen shrimp, thaw them completely. Rinse them under cold running water and trim off the tails for a neater appearance. Since they will be stir-fried, drain them well in a colander to remove excess water. This prevents the dish from becoming watery.

Cut the broccoli into bite-sized florets. To enhance the vibrant green color and for hygiene, add a splash of vinegar and a pinch of coarse salt to boiling water. Once the water is boiling, blanch the broccoli for 1-2 minutes. Be careful not to overcook, as it can become mushy.

Prepare the garlic and onion for stir-frying. Thinly slice the whole garlic cloves to release their aroma, and slice the onion. Having all your ingredients prepped and ready makes the cooking process much smoother.

After blanching, drain the broccoli well in a colander. Removing excess moisture is key to achieving a crisp texture and preventing a watery stir-fry.

Now, let’s stir-fry! Heat a little cooking oil in a pan over medium heat. Add the sliced garlic and sauté until fragrant, being careful not to burn it. This step infuses the oil with a wonderful garlic aroma.

Time to season! You can use a seasoned salt blend like ‘herb salt’ for seasoning, or opt for oyster sauce like I did for a rich umami flavor. If using herb salt, taste and adjust as needed. I found that 2.5 tablespoons of oyster sauce provided the perfect balance of savory and slightly sweet notes.

When you first add the oyster sauce, it might seem like it’s not coating the ingredients well. However, as you continue to stir-fry, the natural moisture released from the vegetables will mix with the oyster sauce, creating a delicious, glossy sauce that coats everything beautifully.

Once the oyster sauce has nicely coated all the ingredients, finish with a sprinkle of black pepper for an extra layer of flavor. Give it one final quick stir, and your delicious Broccoli and Shrimp Stir-Fry is ready to be enjoyed! Serve hot with steamed rice for a complete meal.
