Mala Tang Ingredients

  • 4 Tbsp Haidilao Mala Sauce
  • 450ml Beef Bone Broth (1 carton, store-bought)
  • 450ml Water
  • 1 Tbsp Peanut Butter (for creaminess)
  • 200g Sliced Beef or Lamb
  • 1 handful Imitation Crab Sticks (cut into pieces)
  • 1 handful Sausages (cut into pieces)
  • 1/2 head Nappa Cabbage (cut into large pieces)
  • 2 heads Bok Choy (trimmed)
  • 150g Oyster Mushrooms (trimmed)
  • 2 handfuls Bean Sprouts (rinsed)

Cooking Instructions

Step 1

Begin by preparing all your ingredients. Slice the beef or lamb thinly. Cut the imitation crab sticks and sausages into bite-sized pieces. Chop the nappa cabbage into large sections. Trim the bok choy and oyster mushrooms, then rinse them thoroughly. Rinse the bean sprouts under cold running water and drain.

In a medium to large pot, combine the 450ml of beef bone broth and 450ml of water. Place the pot over high heat and bring the liquid to a rolling boil.

Once the broth is boiling vigorously, place a fine-mesh sieve over the pot. This step is to strain out any large spice particles from the Mala sauce, ensuring a smooth broth.

Carefully add 4 tablespoons of Haidilao Mala Sauce into the sieve.

Don’t discard the spice particles in the sieve just yet! These are crucial for infusing the broth with the authentic Mala flavor and aroma. Let them steep in the hot broth for about 5 minutes to allow the flavors to deepen. Keep an eye on the heat to prevent the broth from reducing too much.

After 5 minutes, gently remove and discard the spice particles from the sieve. (If you find the Mala sauce particularly oily, you can skim off excess oil from the surface of the broth at this point. However, I chose to leave it as is to embrace the full flavor profile.)

Now, add 1 tablespoon of peanut butter to the broth. Stir continuously with a spoon or spatula until the peanut butter is fully dissolved and incorporated into the broth, creating a rich and creamy base. Ensure there are no lumps.

Once the peanut butter has melted smoothly into the broth, add all of your prepared ingredients—beef, crab sticks, sausages, nappa cabbage, bok choy, oyster mushrooms, and bean sprouts—into the pot all at once. Bring the soup back to a simmer over medium heat and cook until all the ingredients are tender and cooked through. Your delicious homemade Mala Tang is now ready to be enjoyed!
