Main Ingredients- 150g Chicken Breast
- 150g Tofu
- 80g Green Onion (use both white and green parts)
- 1g Salt
- Pinch of Black Pepper
- Breadcrumbs (for coating)
- 1 tsp Starch (corn starch or potato starch)
Cooking Instructions
Step 1
First, let’s prepare the green onions, which will add flavor to the hot bar. Split the thick green onions in half lengthwise, then finely chop them into pieces about 0.5cm in length. Using both the white and green parts will enhance the flavor.
Step 2
Tofu is an important ingredient that adds tenderness to the hot bar. Squeeze out as much water as possible from the tofu using a cheesecloth or paper towels. Properly draining the water will prevent the mixture from becoming too wet and help it hold its shape nicely.
Step 3
Chop the chicken breast, our main ingredient, into small pieces of about 1cm. If the pieces are too large, they will take longer to cook, so aim for uniformly sized pieces.
Step 4
In a large bowl, combine the prepared chicken breast, drained tofu, and finely chopped green onions. Add 1g of salt and a pinch of black pepper. Use your hands to thoroughly mix and knead the ingredients until they become sticky and well combined.
Step 5
Add 1 teaspoon of starch to improve the mixture’s consistency and help the ingredients bind together. Any type of starch, such as corn starch or potato starch, will work. Mix well again after adding the starch.
Step 6
Divide the mixture into portions of approximately 100-120g each and shape them into hot bar forms. You can shape them into elongated ovals or cylinders, whatever you prefer. Making them the same size ensures they cook evenly.
Step 7
Coat the shaped hot bar mixture evenly with breadcrumbs. You can lightly dip them in beaten egg before coating with breadcrumbs for a crispier texture, but it’s also fine to skip this step if you prefer. Coat them thoroughly with breadcrumbs to create a crust.
Step 8
Heat a frying pan over medium heat with enough cooking oil to come halfway up the sides of the hot bars. Once the oil is sufficiently hot, carefully place the breadcrumb-coated hot bars in the pan and fry them until golden brown on both sides. Start over medium heat to achieve a crispy exterior.
Step 9
To ensure the chicken breast cooks through, reduce the heat to low after the exterior has turned golden brown. Cover the pan with a lid and cook for an additional 5-7 minutes. This will help cook the inside until it’s moist and tender. You can check for doneness by inserting a skewer; if clear juices run out, they are cooked through.
Step 10
Once cooked and golden brown on both sides, transfer the hot bars to a plate. You can add a little BBQ sauce or ketchup, according to your preference, for extra flavor. Since the mixture is already seasoned, a light coating of sauce is sufficient. Enjoy your delicious chicken hot bars!
