Did you know you can create a delicious side dish with just king oyster mushrooms and fish cakes from your pantry? While they can be stir-fried separately, combining them in one pan not only enhances the flavor but also saves cooking time! The chewy texture of the mushrooms and the soft fish cakes, complemented by the savory oyster sauce and fresh vegetables, make this a perfect partner for your rice. - 4 sheets Fish Cakes (Eomuk)
Cooking Instructions
Step 1
First, cut the green onion in half lengthwise and then into 3cm pieces. This size ensures a pleasant texture and presentation after stir-frying.

Slice the onion into thick strips. Avoid slicing too thinly, as they might become mushy during cooking.

Thinly slice the carrot into rounds, about 0.3cm thick. This will add a beautiful color to the dish.

Wash the king oyster mushrooms thoroughly and slice them diagonally into bite-sized pieces, about 1cm thick. Slicing them too thinly can cause them to lose moisture and become tough, so aim for a moderate thickness.

Cut the fish cakes into bite-sized pieces, similar in size to the mushrooms. For a cleaner taste, you can blanch them briefly in boiling water to remove excess oil and impurities (optional).

Let’s start stir-frying! Heat a pan over medium-low heat and add 3 tablespoons of cooking oil. Add the sliced green onions and stir-fry until fragrant, allowing the oil to absorb the onion aroma. Cook until the aroma is noticeable.

Once the green onions are fragrant, add the prepared king oyster mushrooms, onion, and carrot to the pan. Stir-fry together until the vegetables soften and become slightly translucent.

When the mushrooms and vegetables are cooked to your liking, add the sliced fish cakes, 1 tablespoon of minced garlic, and 1 tablespoon of oyster sauce for seasoning. The oyster sauce is key for that umami flavor!

Continue to stir-fry everything together until well combined. Cook for another 2-3 minutes, allowing the fish cakes to soften and the sauce to coat all the ingredients evenly.
