Simple and Delicious Tuna Fried Rice

Essential Ingredients- 1 can (150g) Tuna
- 1 bowl Cooked Rice
- 1 Egg
- 1 Tbsp Toasted Sesame Seeds

Step 1
First, thoroughly wash and prepare all your vegetables. Finely mince the onion, scallions, and Korean green chilies. If you prefer less heat, remove the seeds from the green chilies before mincing.
Step 2
Now, let’s make some flavorful scallion oil. Don’t discard the oil from the canned tuna; pour it directly into your pan. Add the chopped scallions and stir-fry over medium-low heat until they are just about to turn brown. This process infuses the oil with a wonderful aroma. Once the scallions are golden and fragrant, your scallion oil is ready!
Step 3
Add the minced onion, carrot, and minced Korean green chilies to the pan with the scallion oil. Stir-fry them together. Adding 1 teaspoon of salt at this stage will help bring out the natural sweetness of the vegetables. Cook until the vegetables are slightly softened and translucent.
Step 4
Once the vegetables are partially cooked, drain the tuna can and add the tuna to the pan. Break up any clumps of tuna and stir-fry it with the vegetables. Stirring well will help ensure the fried rice is nice and fluffy.

Add the cooked rice and 1 tablespoon of oyster sauce to the pan. Stir everything together thoroughly, ensuring the rice is evenly coated and mixed with the other ingredients. Oyster sauce adds a wonderful savory depth to the fried rice.

When the rice and ingredients are well combined and almost fully cooked, sprinkle in 1 tablespoon of toasted sesame seeds and 1 teaspoon of ground black pepper. Give it a final stir to distribute the seasonings evenly. Taste the fried rice and adjust the salt if needed. Remember that canned tuna can be quite salty, so season accordingly!

For an optional but highly recommended addition, top your fried rice with a fried egg. Use a non-stick pan with minimal oil. Crack the egg into a bowl, remove the chalazae (the white stringy bits), and lightly season with salt. Whisk gently. Cook over low heat without flipping, aiming for a sunny-side-up or over-easy style, and place it on top of the fried rice for a beautifully complete meal.
