Main Ingredients- 2 handfuls of dried shrimp (for stir-frying)
Seasoning Ingredients- 1 Tbsp cooking oil
- 1/2 Tbsp minced garlic
- 1 Tbsp gochujang (Korean chili paste)
- 1 Tbsp soy sauce
- 1 Tbsp oligosaccharide (or corn syrup)
- A pinch of sesame seeds
- 1 Tbsp cooking oil
- 1/2 Tbsp minced garlic
- 1 Tbsp gochujang (Korean chili paste)
- 1 Tbsp soy sauce
- 1 Tbsp oligosaccharide (or corn syrup)
- A pinch of sesame seeds
Cooking Instructions
Step 1
Start by preparing two handfuls of dried shrimp meant for stir-frying. If your dried shrimp have a lot of small pieces, it’s a good idea to lightly sift them. Heat a clean pan without any oil. Stir-fry the dried shrimp over medium-low heat for 2-3 minutes to remove any raw smell and enhance their nutty flavor. Once toasted, transfer the shrimp to a separate bowl.
Step 2
Using the same pan (or a clean one), add 1 tablespoon of cooking oil over low heat. Add 1/2 tablespoon of minced garlic and stir-fry gently until the garlic becomes fragrant. It’s important to cook the garlic slowly without letting it burn to release its full aroma.
Step 3
Once the garlic is fragrant, add 1 tablespoon of gochujang and 1 tablespoon of soy sauce to the pan. Stir them together and cook for about 1 minute over low heat, being careful not to burn the sauces. This step helps to deepen the flavors of the seasonings. You can also add a pinch of sesame seeds at this stage for extra nutty flavor.
Step 4
Add the pre-stir-fried dried shrimp back into the pan with the sauces. Turn the heat up to medium and quickly stir-fry to coat the shrimp evenly with the seasoned sauce. Ensure the sauce is distributed well and doesn’t clump onto the shrimp.
Step 5
Finally, turn off the heat. Stir in 1 tablespoon of oligosaccharide (or corn syrup/honey) to add a glossy finish. This completes your delicious stir-fried dried shrimp! Allowing the dish to cool completely before storing it in an airtight container will help keep the shrimp crispier for longer.
