As the cool breeze begins to blow, the taste of winter that comes to mind is fresh oysters! The moment I spotted fresh oysters at the market, I decided this winter would be filled with oyster dishes. So today, I’ve prepared an ‘Oyster and Chive Pancake’ recipe perfect for enjoying with my beloved partner. The chewy oysters and fragrant chives will fill your mouth with happiness. I’ll guide you step-by-step, from cleaning the oysters to perfectly pan-frying them!
Key Ingredients- 200g fresh oysters
- 1-2 fresh eggs (for consistency)
- Approx. 1.5-2 Tbsp chopped fresh chives
- 1 red chili pepper (seeds removed and finely chopped)
- 2-3 Tbsp pancake mix (for lightly coating oysters)
- Cooking oil, as needed (for pan-frying)
Cooking Instructions
Step 1
First, it’s time to clean the fresh oysters thoroughly. Place the oysters in a bowl, sprinkle about 0.5 Tbsp of coarse salt over them, and gently stir with a spoon, being careful not to mash the oysters. The coarse salt helps remove impurities from the oysters.
Step 2
When the salt and oysters meet, you’ll notice foam forming and a murky liquid being released, which is characteristic of oyster cleaning. This is a crucial step for removing any fishy odor and enhancing the clean flavor. Continue to stir gently with the spoon for about 2-3 minutes until the impurities are released.
Step 3
After cleaning with salt, drain the oysters in a colander and rinse them under cold running water. Gently swish the oysters with your hands to wash away any remaining salt and residue.

Carefully pat the cleaned oysters dry with paper towels, pressing gently to absorb excess moisture. It’s important to remove as much water as possible, as excess moisture can make the pancake soggy.

Wash the chives thoroughly, drain them, and finely chop them into approximately 0.5cm pieces. Remove the seeds from the red chili pepper and mince it finely as well. Prepping the vegetables like this will help speed up your cooking process.

Now, let’s make the delicious pancake batter. In a large bowl, crack 1-2 fresh eggs. Add the finely chopped chives and red chili pepper. You can adjust the amount of eggs based on your desired batter consistency.

Carefully add the pancake-coated oysters to the egg mixture you prepared earlier. Gently coat each oyster thoroughly with the egg batter, turning them over. Ensuring the oysters are well-coated with egg will result in a richer and softer flavor when cooked.

Heat a frying pan over medium heat with a generous amount of cooking oil. Once the pan is properly preheated, carefully place the egg-coated oysters one by one onto the hot pan. Make sure to leave some space between them so they don’t stick together.

When the edges of the oysters start to turn slightly golden, flip them over one by one in the order they were placed. Cooking over high heat can quickly burn the outside while leaving the inside undercooked, so it’s best to maintain medium heat and cook them evenly. Oysters cook very quickly, so avoid overcooking.

Flip them again and continue to cook for a little longer until golden brown on both sides. Gently lift a pancake to check for a beautiful golden color. Once perfectly cooked, turn off the heat.
