I finally opened a batch of kimchi that I had been preserving without touching! It was still crisp and vibrant. Since it wasn’t aged kimchi, I washed it clean to make kimchi pancakes, and decided to make a delicious Pollack Kimchi Soup using fresh kimchi and pollack. The rich umami from the pollack combined with the tangy and spicy broth from the kimchi creates a soup that truly refreshes your palate. How about a bowl of this invigorating Pollack Kimchi Soup?
Ingredients- 100g dried pollack (thread-like)
- 1/2 head napa cabbage kimchi
- 1 Tbsp minced garlic
- 3 packs seafood broth stock
- 1 Tbsp chopped green onions
- 2 Tbsp anchovy sauce
- 1 ladleful kimchi brine
- 1.2L water
Cooking Instructions
Step 1
First, cut the dried pollack threads into bite-sized pieces. Cutting them into appropriate lengths will prevent them from tangling while cooking.
Step 2
Pour water over the cut pollack and let it soak for about 1 hour until softened. It’s common to stir-fry pollack in sesame oil before adding water, but for kimchi soup, sesame oil can make the broth greasy. Therefore, we’ll soak it in water. We will use the soaking water as part of the broth.
Step 3
This is the last of my large batch of kimchi. Since it hasn’t been opened yet, it’s still wonderfully crisp and fresh.
Step 4
Take half a head of kimchi, chop it into manageable pieces, and add it to the bowl with the soaked pollack and its soaking water. Soaking the pollack for about an hour will soften it and allow its rich flavor to infuse the broth.
Step 5
Now, let’s prepare the broth. Add 3 seafood broth packs, 1 tablespoon of minced garlic, and 1 tablespoon of chopped green onions to the pot. Pour in all 1.2L of water and bring to a rolling boil over high heat. If you don’t have seafood broth packs, anchovy and kelp broth is also a good option.
Step 6
Once the soup comes to a rolling boil, skim off any foam that rises to the surface. This will make the broth cleaner and more refreshing. After skimming, season the soup with 2 tablespoons of anchovy sauce. Anchovy sauce, tuna extract, or salted shrimp can all be used to enhance the savory flavor. If you have half a block of tofu left, feel free to add it in at this stage.
Step 7
The initially clear broth will gradually turn a deep color as the flavors of the pollack and kimchi meld. Now, reduce the heat to medium-low and let it simmer gently to allow the flavors to fully develop. Finally, taste and adjust the seasoning. Add more anchovy sauce if needed. Keep in mind that the flavor will intensify as it simmers, so be careful not to oversalt initially.

Here it is – the Pollack Kimchi Soup, a perfect marriage of refreshing pollack and spicy kimchi! The deep, refreshing pollack broth combined with the tangy, spicy kimchi creates a soup that soothes your insides and makes you crave a bowl of rice. This soup alone makes a satisfying meal, but serving it with an omelet would make it even more complete!
