As the weather gets colder, hunger strikes easily! Today, I’m introducing a hearty and satisfying one-bowl meal, Maejeok Deopbap, perfect for beating the chill. This dish features ‘Maejeok Gui’ – succulent pork neck marinated in a savory soybean paste sauce and then grilled to perfection. Although marinated in doenjang (soybean paste), it doesn’t have a strong doenjang flavor; instead, it boasts a wonderful depth of flavor and umami that makes it incredibly addictive and perfectly coats your palate! Main Ingredients- 2 servings of cooked rice
- 250g HACCP pork neck
- 1/2 onion
- 30g carrot
- 1 stalk green onion
- 1 Tbsp soju
- A pinch of sesame seeds
Maejeok Marinade- 1 Tbsp doenjang (soybean paste)
- 2 Tbsp honey
- 0.5 Tbsp soy sauce
- 2 Tbsp chopped green onion
- 1 Tbsp minced garlic
- 2 Tbsp cooking wine (mirin or similar)
- 0.5 Tbsp brown sugar
- 0.5 Tbsp ginger juice
- 1 pinch black pepper
- 1 Tbsp sesame oil
Vegetable Stir-fry Seasoning- 0.5 Tbsp oyster sauce
- 0.5 Tbsp soy sauce
- 1 Tbsp corn syrup (or other liquid sweetener)
- 1 Tbsp cooking oil
- 1 Tbsp doenjang (soybean paste)
- 2 Tbsp honey
- 0.5 Tbsp soy sauce
- 2 Tbsp chopped green onion
- 1 Tbsp minced garlic
- 2 Tbsp cooking wine (mirin or similar)
- 0.5 Tbsp brown sugar
- 0.5 Tbsp ginger juice
- 1 pinch black pepper
- 1 Tbsp sesame oil

- 0.5 Tbsp soy sauce
- 1 Tbsp corn syrup (or other liquid sweetener)
- 1 Tbsp cooking oil
Cooking Instructions
Step 1
Let’s prepare the star of today’s dish, HACCP pork neck, along with the vegetables for the topping and all the ingredients for the Maejeok marinade.
Step 2
Slice half of the green onion diagonally into bite-sized pieces for stir-frying. Finely mince the other half for the marinade. Slice the carrot and onion into thin julienne strips. Aim for about 0.3cm thickness for the julienned vegetables.
Step 3
To help the marinade penetrate deeply, score the pork neck slices lightly on both sides with a knife. Then, cut them into bite-sized pieces. Scoring the meat makes it more tender and allows the marinade to infuse better.
Step 4
In a bowl, combine 1 Tbsp doenjang, 2 Tbsp honey, 0.5 Tbsp soy sauce, 2 Tbsp chopped green onion, 1 Tbsp minced garlic, 2 Tbsp cooking wine, 0.5 Tbsp brown sugar, 0.5 Tbsp ginger juice, 1 pinch black pepper, and 1 Tbsp sesame oil. Mix these ingredients thoroughly to create the flavorful Maejeok marinade. Add the cut pork neck to the marinade and gently knead it in. Let it marinate in the refrigerator for at least 30 minutes. Allowing sufficient marinating time is key for the flavors to develop.
Step 5
Heat 1 Tbsp of cooking oil in a pan over medium heat. Add the vegetable stir-fry seasonings: 0.5 Tbsp oyster sauce, 0.5 Tbsp soy sauce, and 1 Tbsp corn syrup. Once the seasoning mixture begins to bubble slightly, add the prepared onion, carrot, and the diagonally sliced green onion in that order, and start stir-frying.
Step 6
Be careful not to overcook the vegetables. Stir-fry them for only about 1-2 minutes to maintain their crisp texture. The fresh crunch of the vegetables will enhance the overall flavor of the rice bowl.
Step 7
Now, it’s time to grill the Maejeok. Heat another pan over medium heat and add about 1 Tbsp of soju to help eliminate any porky odor. Add the marinated pork neck and grill until nicely browned and cooked through.
Step 8
When grilling the pork, it’s crucial to cook it slowly over low heat. Use tongs or chopsticks to flip the pieces frequently, ensuring they cook thoroughly to the center. Just before finishing, increase the heat to high for about 10 seconds. This will give the pork a beautiful sheen and a delicious smoky flavor, making your Maejeok even more irresistible. Watch carefully to prevent burning!
Step 9
Fill a bowl with a generous portion of warm white rice. Artfully arrange the freshly stir-fried colorful vegetables on top of the rice.
Step 10
Finally, generously pile the perfectly grilled Maejeok over the vegetables. Sprinkle with a pinch of sesame seeds if desired, and your magnificent ‘Maejeok Gui Deopbap’ is complete! Enjoy this hearty and satisfying meal.
