  • 100g Minced beef
  • 10 Pine nuts

Rice Cake Glaze

  • 1.5 Tbsp Soy sauce
  • 1 Tbsp Sesame oil

  • 2.5 Tbsp Soy sauce
  • 1.5 Tbsp Chopped green onion
  • 0.5 Tbsp Minced garlic
  • 1 Tbsp Sesame oil
  • 1 Tbsp Brown sugar
  • Pinch of black pepper

Braising Sauce

  • 150ml Water
  • 1.5 Tbsp Soy sauce
  • 0.5 Tbsp Brown sugar

Cooking Instructions

Step 1

Prepare all ingredients before you begin cooking. If your garaetteok is freshly made and soft, it will be even better.

Step 1

Step 2

In a bowl, combine the minced beef with the beef filling seasoning ingredients: 2.5 Tbsp soy sauce, 1.5 Tbsp chopped green onion, 0.5 Tbsp minced garlic, 1 Tbsp sesame oil, 1 Tbsp brown sugar, and a pinch of black pepper. Gently mix with your hands until well combined, then let it marinate briefly. This creates a delicious beef filling.

Step 2

Step 3

Lightly toast the pine nuts in a dry pan over low heat to enhance their nutty aroma. Once toasted, finely chop them. These will be sprinkled on top for garnish.

Step 3

Step 4

In a small bowl, whisk together 1.5 Tbsp soy sauce and 1 Tbsp sesame oil to create the glaze for the rice cakes.

Step 4

Step 5

If using frozen garaetteok, they will be hard. First, blanch them in boiling water for about 30 seconds until softened. Be careful not to overcook them, as they can become mushy. Once softened, cut each rice cake in half, then into 3-4cm lengths. Make a deep slit down the center of each piece, similar to how you would prepare oisobagi (stuffed cucumber kimchi), to create a pocket for the filling.

Step 5

Step 6

Carefully stuff the slit portion of each rice cake with the prepared beef filling. Once filled, gently brush the exterior of the rice cakes with the glaze made in step 3. This will give them a beautiful sheen and add extra flavor.

Step 6

Step 7

In a wide pan or pot, combine all the braising sauce ingredients: 150ml water, 1.5 Tbsp soy sauce, and 0.5 Tbsp brown sugar. Bring to a boil over high heat. Once the sauce is bubbling vigorously, carefully add the filled and glazed rice cakes.

Step 7

Step 8

Reduce the heat to medium-low. Continuously spoon the braising liquid over the rice cakes as they simmer, allowing them to cook evenly. Braise until the sauce is slightly reduced but still moist, ensuring the rice cakes remain tender and flavorful. Avoid cooking until completely dry.

Step 8

Step 9

Arrange the braised rice cakes attractively on a serving plate. Finally, sprinkle the chopped pine nuts prepared in step 2 over the top for a beautiful finish. Your exquisite Royal Braised Rice Cakes with Beef are now ready to be enjoyed!
