Rockfish and Radish Stew Made with Mom’s Authentic Recipe
I discovered a rockfish in my freezer and decided to make a fish stew, reminiscent of my mother’s cooking. Her fish stew is known for its savory, slightly spicy, yet perfectly balanced flavor profile – not too hot, not too salty, and wonderfully mild. I’m excited to share this comforting home-style recipe with you.
Main Ingredients- 1 Rockfish (cleaned)
- 20g Radish
- 1 stalk Green Onion
- 1/2 Onion
Seasoning Sauce- 1 Tbsp Soy Sauce
- 1 Tbsp Fish Sauce (or Anchovy Sauce)
- 2 Tbsp Red Pepper Flakes
- 1 Tbsp Minced Garlic
- 1/2 Tbsp Sesame Oil
- 6 Tbsp Water
- 1 Tbsp Soy Sauce

Cooking Instructions
Step 1
Gently thaw the frozen rockfish by soaking it in cold water. Once thawed, rinse it thoroughly under cold running water and pat it dry completely with paper towels.
Step 2
Lightly season the cleaned rockfish on both sides with salt. This step is crucial for enhancing the natural savory flavor of the fish.
Step 3
Mom’s Special Tip! Lightly coat a pan with oil. Sear the rockfish for about 30 seconds on each side. This quick searing helps to remove any fishy odor and prevents the fish from breaking apart during simmering. Just sear the surface lightly.
Step 4
Slice the 1/2 onion into thick strips. Avoid slicing them too thinly so they hold their texture during cooking.
Step 5
Cut the 20g radish into rough, bite-sized chunks. The natural sweetness of the radish will complement the fish beautifully.
Step 6
Slice the green onion diagonally. Using both the white and green parts adds color and flavor.
Step 7
Measure out 1 Tbsp of soy sauce and 1 Tbsp of fish sauce (or anchovy sauce). Using a combination of soy sauces adds depth to the flavor.

Add 1 Tbsp of minced garlic. The pungent garlic aroma helps to balance the richness of the fish.

Stir in 2 Tbsp of red pepper flakes for a mild spicy kick. Feel free to adjust the amount to your preference.

Combine 1/2 Tbsp of sesame oil and 6 Tbsp of water. The nutty aroma of the sesame oil will elevate the stew’s overall flavor.

You can use the same pan where you seared the fish, or a clean pan. Add a little oil, then add the radish and sauté over medium-low heat until it becomes slightly translucent. Once the radish is partially cooked, carefully place the seared rockfish on top.

Pour the prepared seasoning sauce evenly over the fish and radish. Let it sit for a moment to allow the flavors to meld.
Step 13
Heat control is key to a perfect stew! Bring the sauce to a boil over high heat, then immediately reduce the heat to medium. Cover the pan and simmer for about 5 minutes. This allows the flavors to penetrate the fish and radish.
Step 14
Finishing Tip! Near the end of cooking, drizzle 1 tsp of sesame oil around the edges of the pan. This adds a wonderful nutty fragrance that permeates the entire dish. Cover again and simmer on low heat for another 3 minutes for a deeply flavorful and satisfying rockfish and radish stew.
