Using just potatoes and a few staple vegetables you likely have on hand, like onions, carrots, and green onions, you can create a satisfying meal without a special grocery trip. Potatoes are a pantry staple for me because they can be used in so many dishes. This potato fried rice is a hearty and delicious option that’s sure to fill you up!

First, peel the potato and dice it into roughly 1cm cubes, similar to how you’d cut ‘kkakdugi’ kimchi. Rinse the diced potatoes thoroughly under cold running water to remove excess starch, then drain them well in a colander. This step is crucial for preventing the rice from clumping during cooking. Dice the onion and carrot into similar 1cm cubes. While potato vermicelli fried rice is also delicious, I personally prefer the bite-sized cubes as they’re easier to scoop with a spoon. Adding carrots and onions not only adds color and texture but also a touch of sweetness, making the fried rice more interesting. Feel free to add other vegetables you have on hand, like zucchini or bell peppers, for extra flavor and nutrients.

Heat a generous amount of cooking oil in a pan over medium heat. Add the diced potatoes and stir-fry until they start to turn translucent and the edges become slightly golden. Once the potatoes are partially cooked, add the diced carrots and continue to stir-fry. Cooking the harder vegetables like potatoes and carrots first ensures they cook through evenly and retain a pleasant texture.

Taste and adjust the salt if needed at this stage.
