Main Ingredients- 2 medium eggplants
- 1 medium onion
- 7 Tbsp tomato sauce
- 200g mozzarella cheese
- 10g butter
- 2 cloves garlic, minced
- 3g salt (approx. 1/2 tsp)
- 3g black pepper (approx. 1/2 tsp)
- 3g dried basil (approx. 1 tsp)
Cooking Instructions
Step 1
Wash the eggplants thoroughly, trim the ends, and cut them into approximately 1.5cm (about 0.6 inch) cubes. Mince the garlic. Prepping the ingredients like this will make the cooking process much smoother.
Step 2
Wash and peel the onion, then finely chop it into pieces about 1cm (about 0.4 inch) in size, similar to the eggplant. Finely chopped onion blends well with the sauce, adding a deeper flavor.
Step 3
Melt the butter in a heated pan over medium heat. Add the minced garlic and sauté until fragrant. Once the garlic aroma fills the air, add the chopped onion and cook until translucent. When the onion starts to soften, add the cubed eggplant and lightly season with salt and pepper. Sauté over medium-low heat to prevent the vegetables from burning and ensure they cook gently.
Step 4
Continue to sauté for about 5 more minutes, until the eggplant and onion have slightly softened but still retain a bit of texture. Avoid overcooking them into a mush. Once the vegetables are tender, stir in 7 tablespoons of store-bought tomato sauce and mix well. The sweet and tangy flavor of the tomato sauce will perfectly complement the eggplant.
Step 5
Transfer the sautéed eggplant and tomato sauce mixture into an oven-safe dish, arranging it nicely. Generously sprinkle 200g of mozzarella cheese over the top. Using plenty of cheese ensures a delicious, gooey gratin when baked.
Step 6
Place the gratin in a preheated oven at 180°C (350°F) and bake for about 10 minutes, or until the cheese is melted, golden brown, and bubbly. Baking time may vary depending on your oven. Keep an eye on it to prevent the cheese from burning!
