Introducing our ‘Shrimp and Chive Pancake’, a delightful dish that combines the fragrant freshness of spring chives with the firm, juicy texture of shrimp, offering both delicious taste and excellent nutrition. Main Ingredients- 1.5 cups pancake mix (buchim garu)
- 2 cups cold water
- 200g frozen shrimp, peeled and deveined
- 3 Cheongyang peppers (or other spicy green chilies)
- 1 bunch fresh chives (approx. 100g)
Cooking Instructions
Step 1
First, in a large bowl, combine 1.5 cups of pancake mix with 2 cups of cold water. Using a whisk or chopsticks, gently mix until the powder is fully incorporated and you have a smooth batter. Be careful not to overmix; a few small lumps are perfectly fine.
Step 2
Wash and trim the fresh chives, then pat them dry. Gather a bunch of chives in your hand (about 100g) and cut them into approximately 5-6 cm lengths. Add the cut chives to the batter bowl.
Step 3
Finely chop 3 Cheongyang peppers (seeds removed if desired) and add them to the batter along with the chives. Feel free to adjust the amount of peppers based on your preference for spiciness.
Step 4
Thaw the 200g of frozen shrimp under cool running water, then thoroughly pat them dry with paper towels. To ensure they cook well and integrate nicely, thinly slice the shrimp into ‘fillets’ or butterfly them.
Step 5
Add the prepared shrimp to the batter bowl. Gently mix everything together with the chives and peppers until well combined, creating the shrimp and chive pancake batter.
Step 6
Heat a frying pan over medium heat and generously coat it with cooking oil. Ladle the batter thinly and evenly across the pan to form a single layer. It’s crucial to spread the batter thinly so it cooks through without becoming soggy.
Step 7
Cook until golden brown and crispy on both sides. Once the chives are wilted, the shrimp are cooked, and the batter is crisp, your delicious shrimp and chive pancake is ready! Slice it into desired portions and enjoy while warm.
