Cookie Dough Ingredients- 1 fresh egg
- 12g unsalted butter (melted in microwave for 40 seconds)
- 1 mandarin orange, peeled and deseeded
- Pancake mix (for adjusting dough consistency, approximately 100g)
Cooking Instructions
Step 1
In a clean bowl, crack 1 fresh egg. Add 12g of unsalted butter that has been gently melted in the microwave for about 40 seconds. Whisk these ingredients together thoroughly with a whisk or fork until well combined, creating a smooth egg-butter mixture.
Step 2
Thoroughly wash the mandarin orange. Peel it completely, and then carefully remove all the white pith and any seeds. Place the prepared mandarin segments into the bowl with the egg-butter mixture and gently mix them in. The natural juice from the mandarin will contribute to a moist cookie.
Step 3
Now, we’ll use pancake mix to achieve the right dough consistency. Gradually add the pancake mix to the egg and mandarin mixture, stirring with a spatula or your hands until a dough begins to form. The final dough should be slightly sticky to the touch, similar to the consistency of dough for ‘hotteok’ (Korean sweet pancakes). Adjust the amount of pancake mix as needed to reach this texture.
Step 4
Wrap the dough tightly in plastic wrap or place it in an airtight container and refrigerate for about 30 minutes to let it rest and firm up. Chilling the dough makes it much easier to handle. Once chilled, lightly dust your hands with a bit of pancake mix to prevent sticking. Shape the dough into small, bite-sized balls or your desired cookie shape. You can also flatten them slightly.
Step 5
Preheat your air fryer to 160°C (320°F). Carefully place the shaped cookie dough balls into the preheated air fryer basket. Bake for approximately 8 minutes. It’s crucial to keep an eye on the cookies as they bake, checking them periodically to ensure they don’t burn. Cooking times can vary depending on your air fryer model, so start checking around the 7-minute mark and adjust the time as needed.
