Crepe Batter- 2 Tbsp rice flour
- 3 Tbsp milk
- 1 large egg

- 3 button mushrooms
- 1 large egg (for topping the crepe)

Cooking Instructions
Step 1
First, prepare the filling ingredients. Thinly slice the button mushrooms and cut the bacon into approximately 3cm pieces.

Make the crepe batter. In a bowl, combine the rice flour, milk, 1 egg, and a pinch of salt. Whisk thoroughly with a whisk or fork until smooth and free of lumps. Adjust the batter consistency so it’s not too runny.
Step 3
Heat a pan over medium-low heat and lightly grease it with cooking oil. Add the sliced mushrooms and sauté until fragrant. In a separate pan (or after wiping the mushroom pan clean), cook the bacon until golden brown, sprinkling with pepper. Cooking them separately helps to enhance the flavor of each ingredient.

Now it’s time to cook the crepe. Keep the pan over low heat and melt the butter. Pour a thin layer of the crepe batter and cook until it’s set. Once the crepe is partially cooked, generously sprinkle shredded cheese over it. Then, arrange the sautéed mushrooms and cooked bacon nicely on top. Carefully crack 1 raw egg into the center. Finally, fold the crepe into a neat rectangular shape.
Step 5
Reduce the heat to very low or turn it off briefly. Cover the pan with a lid and let it cook for about 2-3 minutes, or until the egg white is set and the yolk remains soft-boiled. The runny yolk will add moisture and richness, making the crepe and its filling even more delicious. Serve immediately while warm!
