Main Ingredients- 2 slices of bread
- 1 handful of mozzarella cheese (approx. 50-70g)
- 2 eggs
- A little oligodang (Korean corn syrup), to taste
- 1/2 Tbsp cooking oil
Cooking Instructions
Step 1
First, prepare the 2 slices of bread for your toast. It’s best to use bread that isn’t too stale.
Step 2
In a clean bowl or cup, crack in 2 eggs. Use a spoon or fork to whisk them thoroughly until the yolks and whites are well combined. Since we’ll be using this egg mixture in two parts, prepare it so you have roughly half for each use.
Step 3
Heat 1/2 tablespoon of cooking oil in a frying pan over low heat. Tilt the pan to ensure the oil lightly coats the entire surface. Once the oil is slightly warm, place about a handful of mozzarella cheese in the center of the pan. Maintaining low heat is crucial to prevent the cheese from burning and allow it to melt gently.
Step 4
Carefully pour half of the prepared egg mixture over the cheese. The egg will start to cook and spread around the cheese in the pan.
Step 5
Once the egg mixture covers about half of the pan, place one slice of bread on top. It’s important to shape the egg mixture so it doesn’t spill over the edges of the bread. Using a spatula, gently coax any egg mixture that has spread beyond the bread’s edges back onto the bread to neaten the shape. Then, gently press down on the entire slice of bread with the spatula to help the egg mixture and cheese adhere well.
Step 6
Now, pour the remaining half of the egg mixture onto the top of the bread. Pour the egg mixture in the center of the bread, and use the spatula to spread it evenly over the entire surface of the bread. Allow the bread to absorb the egg mixture well.
Step 7
Now it’s time to carefully flip the toast. Use the spatula to lift and flip the bread. If there are any spots where the egg mixture didn’t coat well, pour the remaining egg mixture onto those areas to ensure the entire bread is evenly coated. Flip the toast back and forth with the spatula until both sides are golden brown and cooked through.
Step 8
Once both sides are evenly golden and the egg mixture is almost fully cooked, lightly drizzle a little oligodang over the side with the mozzarella cheese (which is now facing down). Oligodang adds a sweet flavor and a nice sheen. Adjust the amount to your preference or omit it if desired.
Step 9
Finally, use the spatula to fold the toast in half, and your delicious cheese egg toast is complete! It’s best enjoyed immediately while warm, for that ultimate gooey cheese pull.
