  • 2 Tbsp well-fermented soybean paste (Doenjang)
  • 1 Tbsp fine chili powder (Gochugaru)
  • 1 Tbsp raw sugar or brown sugar
  • 2 Tbsp corn syrup or oligosaccharide
  • 1 Tbsp sesame oil
  • 1 Tbsp toasted sesame seeds (crushing them slightly enhances the aroma)

First, prepare the green onion, which will add flavor to the ssamjang. Wash the white part of the green onion thoroughly. Finely chop it into about 2cm pieces; this helps the seasoning mix evenly and provides a pleasant texture.

Now, let’s make the delicious seasoning for our ssamjang! In a bowl, combine 2 Tbsp of well-fermented soybean paste, 1 Tbsp of fine chili powder, 1 Tbsp of raw sugar (or brown sugar) for sweetness, and 2 Tbsp of corn syrup (or oligosaccharide) for a smooth sheen and sweetness. Lastly, prepare 1 Tbsp of sesame oil and 1 Tbsp of toasted sesame seeds to add a nutty aroma. (Slightly crushing the sesame seeds will boost their fragrance.)

Using a spoon or spatula, mix the seasoning ingredients prepared in step 1 until they are well combined and form a smooth paste. Avoid over-mixing; just blend until all ingredients are evenly incorporated.

(For reference: If making Ssamjang to accompany Jeyuk Bossam) If you are making ssamjang to go with Jeyuk Bossam, prepare 1kg of pork. Rinse it under running water about 3 times to remove any blood. In a pot, add 2 Tbsp of doenjang, 3 Tbsp of Mishyang (or cooking wine), 4 slices of fresh ginger, a handful of onion peels, and enough water to cover the pork. Dissolve the doenjang and bring to a boil over high heat. Once boiling, reduce the heat to medium-low and simmer for about 40 minutes.
