Basic Ingredients

  • 3 cloves fresh garlic
  • 3 strips flavorful bacon
  • 5 sweet cherry tomatoes
  • 5 aromatic black olives
  • 100g cooked fusilli pasta
  • 1 Tbsp salt (for seasoning)
  • A pinch of black pepper
  • A pinch of dried parsley (for garnish)
  • 4 Tbsp extra virgin olive oil
  • 1 cup rich tomato sauce
  • 2/3 cup pasta cooking water (reserved)

Cooking Instructions

Step 1

First, bring 1.5 liters of water to a boil in a pot for cooking the fusilli pasta over high heat.

Thinly slice 3 cloves of fresh garlic into about 0.3cm thick rounds. This will help infuse the pasta with a lovely garlic aroma.

Once the water is at a rolling boil, add 1 tablespoon of salt and stir until dissolved. Add 100g of fusilli pasta and cook for about 10 minutes, or 1 minute less than the package instructions. (Reserve about 2/3 cup of the pasta water before draining.)

Drain the cooked fusilli, then immediately toss it with 1 tablespoon of olive oil. This prevents the pasta from sticking together and gives it a nice sheen.

Heat 3 tablespoons of olive oil in a large pan over medium-low heat. Add the sliced garlic and sauté gently until fragrant, being careful not to burn it. The aroma should be subtle and pleasant.
