When starting a diet, I often switch from white rice to mixed grains with brown rice and beans. However, I also frequently substitute rice with tofu or mix it with the brown rice and bean mixture. This method is easy on the digestion, satisfying, and helps reduce carbohydrate intake. Today, I’ll show you how to make super simple anchovy rice balls using tofu and a small amount of rice, which can be quickly prepared with side dishes you already have at home.
Main Ingredients- 1 Tbsp stir-fried anchovies (Soy sauce-based or spicy stir-fried anchovies are both fine)
- 1 handful of cabbage (finely minced)
- 3 Tbsp seaweed flakes (gim)
- 1/3 block of tofu
- 2 Tbsp cooked rice (brown rice, mixed grain rice, etc. are suitable)

Step 1
Let’s make delicious rice balls using the stir-fried anchovy side dish you have at home. I used a slightly sweet and savory soy sauce-based stir-fried anchovy, but spicy stir-fried anchovies would also be very tasty! Please choose your preferred type of anchovy.
Step 2
It’s crucial to remove as much moisture as possible from the tofu. Wrap the tofu in 2-3 layers of paper towels and press down firmly with your hands to squeeze out excess water. This step prevents the rice balls from becoming mushy and enhances their savory flavor.
Step 3
Once the moisture is removed, mash the tofu using a fork or your hands until it’s soft. Finely mince the cabbage as much as possible to add a nice texture. The crispness of the cabbage will balance the flavors of the tofu, anchovies, and rice.
Step 4
Combine the mashed tofu, minced cabbage, seaweed flakes, cooked rice, and the prepared stir-fried anchovies in a bowl. Drizzle with sesame oil. Mix everything together thoroughly with your hands until well combined. If you find it needs more seasoning, you can add a tiny pinch of salt or a drop of soy sauce, considering the saltiness of the anchovies.
Step 5
If shaping the mixture into individual rice balls seems too much effort, you can simply serve it as a bibimbap-style dish and mix everything together in a bowl. This is a recommended method for a quick and satisfying meal.
Step 6
Shape the mixture into bite-sized balls. Gently and firmly press the mixture with your hands to form the balls. They will be visually appealing and taste even better when shaped this way! These are also perfect as a snack for kids or as part of a packed lunch.
